Cast Iron Skillet Game Hens


Tonight I had some game hens thawed out so that was dinner.I did however make some four cheese mashed potatoes and brown gravy for sides.
I rubbed the hens with Lawrys seasoned salt then threw on a dash of parsley.Baked at 375 for an hour and 15 mins then basted with bacon grease.Baked 15 more minutes at 400.

Dutch Oven Ice Cream


Ingredients
1 package (3.4 oz.) instant pudding (any flavor
2 cups milk
1/2 cup sugar
1 egg
1/2 tablespoon vanilla extract
1/4 teaspoon lemon juice
1 cup whipping cream
1 can (12 ounces) evaporated milk

Equipment2 mixing bowls
mixing whip
large metal spoon
12 inch Dutch Oven
bowl large enough for dutch oven and ice
25-35# ice depending on ambient temperature
rock salt

InstructionsChill a 12 inch dutch oven.
Mix pudding and milk.In a separate bowel, mix sugar, egg, vanilla, and lemon juice. Add to pudding mix.
Pour mixture into a dry and very cool dutch oven. Add whipping cream and evaporated milk, stir. Put lid on dutch oven.
Put layers of ice and rock salt in bottom of large bowl then put dutch oven on top centered in the large bowl. Surround dutch oven with layers of ice and rock salt. Placing ice on top of the dutch oven (no deeper than the lid) will cool the oven down faster. Lift lid and stir every 5 minutes or so. It will go slowly at first until the oven gets cold. Add ice and salt as needed but be careful not to get salt or ice or water from the lid in the oven. Total freezing time is 30-45 minutes, longer if you want harder ice cream.



Black Bean Soup

1 pint store-bought fresh salsa
1 16 oz. can refried black beans
1 15 oz. can black beans, drained and rinsed
1 14.5 oz. can vegetable or chicken broth
1/2 cup lowfat or regular sour cream
1/4 cup chopped fresh cilantro, roughly chopped
1 small chopped onion

     Lightly oil or spray an 8 or 10 inch dutch oven.
     Combine 1 1/2 cups of salsa, refried beans, black beans and broth in dutch oven; stir well.
     Heat over a full spread of coals with enough briquettes on the lid to keep it at a steady simmer for 30 minutes.
     Divide among bowls and top with sour cream, cilantro and remaining 1/2 cup salsa.  Makes 4 servings.
Note:You can add fried bacon or hog parts for added flavor.

The Bean Hole

Digging a bean hole has long been a storied tradition in the North Woods, but there’s no reason it can’t be done at a deer or fish camp anywhere. The combination of woodsmoke and molasses flavors in this bean dish can’t be duplicated any other way.

Ingredients:
10 cups dried great Northern or yellow-eye beans
1 lb. salt pork, cut into 2-inch strips
2 large onions, diced
21⁄2 cups molasses
2 tsp. black pepper
4 tsp. dry hot mustard
1⁄2 cup butter

Step 1: Dig a hole that’s twice as deep as and 1 foot in diameter larger than your Dutch oven. Toss a few rocks or a length of chain in the bottom. Fill the hole with hardwood, and burn it down until the hole is three-quarters full of hot coals.
Step 2: Precook the beans by slow-boiling them for about 30 minutes. Drain.
Step 3: Place salt pork in the Dutch oven, layer onions on top, and pour in beans, ­molasses, black pepper, and mustard. Slice butter and place on top. Add enough boiling water to cover beans by 1⁄2 to 1 inch. Cover the pot with aluminum foil and then the lid.
Step 4: Shovel out about a third of the coals, and put the bean pot in the hole. Replace the coals around the sides of the oven and on top, and fill the rest of the hole with dirt. Cooking time varies, but give it a good 8 hours.

  • 1/4 cup butter
  • 1/2 cup brown sugar
  • 1-21oz can cherry pie filling
  • 1 chocolate cake mix
  • 3 eggs
  • 2/3 cup melted lard
  • 1 cup water



Place butter and brown sugar in the oven and stir until well mixed.Place the cherry filling in the butter and sugar mixture in the bottom of the oven.

In a separate bowl, mix the cake mix and ingredients. Pour this batter over the cherry filling in the oven,bake about 30-40 minutes at 350 degrees.Test the cake for doneness with a straw or toothpick.
When the cake is done, remove from the oven, and let the oven cool for about 10 to 30 minutes. Using a large cutting board or a piece of card-board,covered with waxed paper or parchment paper, hold the board on top of the oven and turn the oven upside down quickly. This will allow the cake to fall on the board and the cherry filling will be on the top.
